This year I started listening to Jordan Peterson’s lectures on the Old Testament and was blown away by the magnitude of his insight and ideas. I became a massive fan. He spoke that his daughter Mikhaila had been ill her entire life with arthritis (hip and ankle replacements), depression and other debilitating symptoms like sleeping for 18 hours a day. She was now on an all beef diet and all her symptoms were in remission and she was totally well, a vibrant young woman who even just delivered a healthy child. Because of her dramatic transformation, now the entire Peterson family, Jordan, his wife Tammy, Mikhaila and her husband, are all on an all beef diet. Jordan’s depression vanished and he lost 50 pounds. He says he feels great. This was all interesting to me to say the least.
Next I listened to an interview with Dr. Shawn Baker on Joe Rogan. Baker is a medical doctor and elite-level athlete who pretty much looks like He-man. He has been eating carnivore for over a year and is breaking records in rowing at the age of 52. On the podcast Shawn mentioned Joe and Charlene Andersen who have been eating carnivore, mostly ribeye steaks for 20 years. Charlene, very sick with Lyme disease led them to try all different sorts of diets. The carnivore diet reversed all her symptoms and well, seriously you should google this couple and see what they look like now. After poking around the internet, all of a sudden I realized there is an entire community of people who only eat meat and are extremely healthy.

I started watching videos and listening to lectures about the science behind an all meat diet and oddly it made sense. It kinda turns everything you ever thought about food on its head. So I thought to myself, I am really sick and I will try anything to get better. It’s not that hard.” By this point I was already used to eating a low carb diet, with the rare sugar, ahem, pieces of dark chocolate, and already used to consuming beef up to 4-5 times a week. All beef wouldn’t be a difficult transition.
I decided I was going to take the plunge, but I didn’t want to do anything too drastic till after the performing season was over. I couldn’t afford to sabotage my concerts. So I decided that I would just go down to about 10 ingredients and get used to eating that until the concerts were over. Here was my list.
Beef
Sweet Potatoes
Olive Oil
Butter
Coffee
Chocolate
Raspberries
Blueberries
Greens
However, apparently that was enough to screw around with my electrolytes as my body was adjusting to a new way of eating. I didn’t realize that it was electrolytes at the time and thought it was low blood sugar, because I noticed that if I would eat my symptoms would lessen. However, a couple times I ate until I could eat no more and the symptoms were still very extreme. I was experiencing the same thing as when I went very strict Keto which lack of success I blamed on blood sugar. Now I see it was electrolytes all along, not surprising because even prior to changing my diet I have had major deficiencies.
Anyway a couple of concerts were a little rocky due to trying to navigate these changes in my body, but finally the season was done. I breathed a huge sigh of relief. It was time to begin and heal. I felt very hopeful, perhaps more hopeful than ever before that I could actually heal. My last concert I had trouble moving my 3rd and 4th fingers (50% of my violin left hand!!) and vision problems. I was tired of dealing with that, concert after concert. I knew I could continue to deal as I had for 20 years, but I was tired and ready to see what could be done. This all beef diet really seemed to cure people or put their diseases into remission. Why wouldn’t it work for me? I think it would.
And so that’s it. I began an all beef diet and now I’m here on week 6 and I’m seeing some great changes. I’ve lost weight, lost the bloat, the merciless tight feeling in my body, I can withstand the stress of heat without feeling miserable, I don’t have to keep going back to bed, I have more energy, and my skin is clear. I have hope. And this is just the beginning. Thank you Lord.
Even though the Ulcerative Colitis was thankfully in remission I still had a host of other symptoms such as brain fog, fatigue, weak arms, loss of sensation in hands et al. Originally I thought that all the problems associated with lack of circulation, numbness and weakness in my arms were due to the diagnosis of Thoracic Outlet Syndrome (TOS) I had received from the head of the Vascular Surgery department at the University of Rochester hospital when I was 22. That had to do with a compression of the nerve and artery bundles that run under the clavicle and symptoms would occur when I would play the violin. (All that is quite another story indeed.) But I noticed that my arms would get floppy and weak at times even if I hadn’t played the violin at all, and symptoms would occur or intensify suddenly. Plus the brain fog would usually accompany it and that certainly wasn’t related to what could have been TOS.
I had a lot of other symptoms as well at this time, but then as now one of my chief concerns was how to play the violin without a fuzzy brain, debilitating pain and muscle weakness, so I paid special attention to when these symptoms were happening. I concluded that they did not result entirely from putting stress on my body while playing the violin.
A wonderfully knowledgeable and skilled chiropractor in town believed my symptoms in part were due to food sensitivities so she sent me to get blood work done. The results were actually not surprising considering the dysfunction of my health, but this concrete piece of information was to be the next single greatest game changer in my health. The blood work revealed that I was sensitive to some degree of ALL but 3 of the 120 plus foods and moderately to highly sensitive to half of them. The only 3 foods I had zero sensitivity to were BEEF, broccoli and cherries.
I was obviously advised to eliminate all highly sensitive food and to eat sparingly the moderately sensitive foods and rotate the low sensitive foods. But if I wanted to have a great violin rehearsal and performance, guess what I ate? Beef. During this period in my life my health was pretty poor and I wasn’t playing the violin nearly as much as now, but as my health improved so did the quantity of my rehearsals and performances. This year I found I was eating beef as much as 4-5 times a week to give me the optimal performance I needed.
Staying away from the foods I was highly sensitive to wildly increased the quality of my life. Not only did I feel better physically, but psychologically I didn’t need to battle the constant humility and despair of having repeated rehearsal and performance disasters where I was totally incapacitated by a “hijacked” brain (a couple times I remember being so disoriented the only thing I could focus on was trying to move my bow in the same direction as everyone else) or a body too weak, slow or numb that it could not physically execute the passages. Even though I still struggle with slow fine motor skills and weakness the degree is no where near as debilitating as it once was, and that’s saying a lot.
Even though I believe that my tolerance to many of the sensitive foods has increased I still feel by far the most energized in my body and the most focused in my brain when I eat beef, plus it’s reliable with no surprises. The worst is when I’m all geared up to do a rehearsal and then I go out to eat and ingest something that clouds my thinking and makes my arms like gumby. It’s disheartening. I rarely take that chance anymore. Who needs that? So if there’s gonna be music, there’s gonna be beef.
Believe it or not, eating an all beef diet was a somewhat logical progression for me over time. Around the age of 9 I was diagnosed with Ulcerative Proctitis which quickly developed into Ulcerative Colitis, considered to be an incurable inflammatory disease. I had ups and downs with the illness including one hospitalization and symptoms characterized by painful intestinal attacks and severe internal bleeding. I had stabilized the disease from progressing by a combination of pharmaceutical grade nutritional products and drugs.
Around the age of 26 I went to visit a nutritionist as a recent flare had me concerned. The nutritionist asked me what my diet was and I told him mostly vegetarian; I simply didn’t really like to cook and didn’t know what to do with meat. After he had taken some blood to determine my blood type he handed me a piece of paper that was shockingly fascinating. The paper had listed under blood type O, my blood type, a small list of about 5 illnesses that might occur if you were not eating right for your blood type. One of them was Ulcerative Colitis. To reiterate there was not a long lengthy, generalized list of diseases, like some horoscope that can be made to apply to anyone, but no more than five that were very specific. The nutritionist told me that I needed to be eating a lot of red meat and he would recommend eating about 3 steaks for the rest of the week and that I take iron pills. So I did as told and I swear to you my horrific internal bleeding ceased and all my attacks subsided. I was symptom free for about 3 years. I stopped all medicine. Seriously. After nearly 20 years.
After that 3 year mark I went back to college and found myself to be more stressed out than I had ever been in my life. The bleeding began again and so I increased the amount of beef and took iron pills and did not resume any medication. Once again after a while, longer this time because I was truly near disaster in other ways with my arms being numb, brain fog and what now I know to be Lyme/mold symptoms, my bleeding stopped. And get this, this time the bleeding stopped for good and has never returned. That was 12 years ago and I’m never going to stop eating meat.
I had a routine colonoscopy at a major hospital in NYC during that first remission, since I had read that anyone who has (had) Ulcerative Colitis has a greater risk of colon cancer and should have a colonoscopy every five years. I told the doctor my story and before examining me he completely dismissed everything I told him and even went as far to insist first of all that I needed to be on medication and then flipped to maybe I didn’t even or ever have Ulcerative Colitis and was totally misdiagnosed. These doctors are really too much some times. But nonetheless after the examination he said that it was clear that the scarring showed I did have Ulcerative Colitis but I didn’t need to be on medication. Duh! Of course he did not ask me any questions about how me having an incurable disease could be in remission or seem to be interested in how my story could help other patients.
That’s the last colonoscopy I’ve had or anything to do with Ulcerative Colitis and I owe it all to that nutritionist who had me radically change my diet. I don’t know if the blood type thing is true, but I know that the diet changed my life. It’s been 12 years since I’ve sat on a toilet afraid that my insides were going to come out or have my intestines eat themselves to death inside me. That is all in the past, thank you juicy ribeye.

People who suffer from Lyme disease may also often be vulnerable to mold illness. I won’t go into it here why that is, but in this post I am going to discuss treatments that I have used that apply to either or in some cases both. In this post I will discuss only that which I’ve tried post Lyme/mold diagnosis. It is my hope that as we who have or had Lyme or mold illness continue to share information with each other we can get better quicker! I would love to hear what you have tried. Cats-a-tonic, Cats Claw herb, good for fighting Lyme bacteria and supporting the immune system.
Cholestyramine for binding Lyme bacteria and toxins. Oh the dark days of cholestyramine. This was the first thing I tried post MD diagnosis. This drug originally designed to curb cholesterol is heavy duty to the max and definitely worked in that it was pulling so much garbage from my cells that my liver simply could not keep up. It is the ultimate binder. On the positive side taking the drug revealed that my body was one giant garbage dump of myco and biotoxins and there was definitely more than plenty for the cholestyramine to bind to. On the negative I felt like hell and cancelled work for at least a week. I was in bed most of the time and when I wasn’t I remember going to rehearsals barely able to have the strength to even walk or think. My tongue started to coat and I was losing my sense of taste. Not good signs. I began coffee enemas as a way to help my liver cope, aiding it in the detox. The coffee enemas definitely helped reduce the misery, but in the end I couldn’t handle it. I was permanently wasted and my doctor said that that could be doing me harm. If the liver can’t process the toxins then they go back in the body, causing a lot of misery for little benefit. After about a month I ceased taking it. It’s also awful to drink, sticks to your teeth and can eat away at the enamel on your teeth.
Coffee enemas for liver detox and parasite removal. So while I began coffee enemas for the purpose of liver detox to my horror parasites began coming out. I had no idea. I will stop right there and maybe when I’m brave enough I’ll do a post about it. From what I’ve read many poor Lymers have parasites and doctors don’t know what to do. Classic American thinking is that we don’t have a problem in this country. I can tell you we have a problem and unfortunately there is little medical information here and most drugs need to be ordered from outside the US.
I figure that it is better to have parasites in the toilet rather than inside one’s body so I have continued with the coffee enemas. I use S.A. Wilson’s coffee specifically roasted to be used for coffee enemas. I have continued to be amazed at the healing power of coffee enemas. Weird but true. Coffee enemas- parasites? Gross? Bizarre? Well Lyme disease ain’t no joke or for the faint of heart.
Charcoal for binding toxins and bacteria. This is a staple here for both Lyme and mold symptoms. It’s very helpful and important in getting the bad junk OUT! I don’t experience anything negative when taking. It’s just messy, but you can get it in pill form. It is much gentler than the cholestyramine.
The Wiegman Protocol for Lyme consists of Pulsing antibiotics/Ivermectin/Triobiotics while daily ingesting apricot kernels and Cherry Bark serum, Pinella Bark, Vitamin D and B complex. I think this protocol did cause a lot of die off and that means it definitely had healing properties. While not a fan of antiobiotics, the pulsing was gentle and low dose. Also the logic of the protocol is one that is well researched and intuitively makes sense. Perhaps not dramatic results, but any die off is a positive result. I had the most die off with the Triobiotics.
VRM2 for killing parasites, a nasty coinfection from Lyme-taxed immune system. This supplement is taken 10 days on, 6 days off. I repeated this cycle probably for a year. It definitely helped me to feel better as it was obviously attacking the parasites, but in the end the infection was far too advanced.
Mimosa Pudica for killing parasites. This supplement also helped but could not cure.
Alinia for killing parasites. This was my next try in the battle against parasites. The cost in US is I believe over $12,000. I was able to purchase it from Canadian Online Pharmacy for I believe less than $100. I was on this for one month. This was a good try as this is a very strong drug and I believe it will work well in tandem with other drugs long term. It is a part of the Klinghardt parasite protocol. I experienced major die off from this, more so than from the natural supplements, but in the end the infection was way too advanced for this drug to smite the population in only one month and it is not meant to be used alone for long term.
Klinghardt parasite protocol: The drugs required for this protocol totaled over $18,000 in the US. I was able to get them all through the Canadian Pharmacy for just over $200. This is a heavy guns approach to parasites requiring a year rotation of about 5 different drugs. Additionally taking the drugs is only one part of his more comprehensive protocol of which the information on the web is chaotic and confusing. The overall entire protocol involves so many moving parts I don’t know how any one could have the chance of piecing the information together to form a cohesive plan. However, concerning the pharmaceutical aspect as was prescribed from my doctor I have all the drugs in a cupboard ready to go but I am going to try one more herbal protocol before going ahead with the Klinghardt. I want more than anything to be healed from the infection but I don’t want to invoke more damage on my microbiome if at all possible.
Herbal parasite protocol: This is on its way. I am eager to begin it! Update later.
Glutathione Liposomal for detoxing from mold. I noticed a tangible difference in my energy levels after I began taking this. This is a keeper!
Shade’s Bitters No. 9 for detoxing from mold. This is part of the Gluthione Liposomal protocol.
Buhner Protocol for Lyme: this is my next plan after I finish the herbal parasite protocol.
The ultimate elimination diet: beef, salt and coffee. Many people have reported incredible healing from major illnesses after ingesting only beef and water long term. I am currently giving it a try. At the time of this writing (7/19) I am in my 6th week. I have lost weight, reduced bloating, parasites are in remission, stabilized blood sugar, my joints feel more supple and I always feel good after eating. It’s enough positive changes to keep going with it in spite of the obvious difficulty of such a diet.
Sauna for detoxing. I have heard and read a lot about the powerful detoxing benefits of saunas. Infrared are the most recommended, but visits are very expensive unless you own your own. Traditional saunas can provide much benefit, perhaps with longer sessions. I just joined the YMCA for this purpose alone. Update to come!
Ripping up carpets to eliminate any source of mold and allergens, and indeed there was mold on the back of the carpet in my bedroom. I felt so much better after this that my doctor decided to change the strategy and fight the mold illness as priority over Lyme.
Quercetin- Fish Oil- Curcumin
for allergies/inflammation. This combo is a game changer. Spring time
rolls around and my body burns, hurts and feels inflamed. This
combination immediately sinched the inflammation and life returned to
normal (as it gets.)
Epsom salt baths for continual detox and magnesium supplementation. This is an essential part of my routine. Because my body consistently gets locked up with sore, hurting muscles the magnesium infusion is serious therapy. Also because since every approach to healing from Lyme and mold involves binding toxins and bacteria, the liver is under huge stress. Epsom salt baths help in the detoxifying process.
Ph/ Polar minerals from Premier Research for electrolyte balance. I cannot live without these. They have made a tremendous difference in the quality of my life. I cannot do any intense physical activity without chugging these daily. Staple.
Magnesium. This is a part of the Ph/Polar mins but it deserves its own space because if I do not take magnesium and Vitamin D which helps to aborb magnesium my brain starts doing weird things. When I start having invasive thoughts I know it’s time to up the D/Mag.
Egoscue exercises and stretches. I have tried yoga, Feldenkrais, Alexander, chiropractic, tai chi, physical therapy and probably more in between, but nothing has provided me with results like Egoscue. I was able to increase my playing time from 2 to 4 hours a day, change the way my body looked by realignment, drastically reduce pain and have the most essential tools in my kit for daily postural, strength maintenance especially as it relates to playing the violin for hours a day. This was one of the biggest game changers. Thank you Mackie!
Regular sleep. People dealing with Lyme and mold illness require longer than average sleep.
Being outdoors.
Truly the life-giving properties of the sun and fresh air while on
extended weeks long adventures has me feeling the best I ever do, my
symptoms are at a minimum.
Minimizing stressors
such as flourescent lights, bright lights, food sensitivites, chronic
stress, computer overuse, chemicals, alcohol and physical overexertion
help to keep symptoms at bay.
Icing for pain. This is definitely a tool in my box. Lyme has my body less able to repair itself and withstand physical exertion. Constant time on the violin flares symptoms.
Hello reader, one of the reasons that Lyme disease or mold illness is difficult to diagnose is that there are a myriad of symptoms which come and go and are seemingly unrelated to each other. Many of the symptoms belong to other ailments as well and each individual has their own special concoction of misery making the clues difficult to piece together. Hi everyone! I took a week off from my updates because I was basking in the sun at the Outer Banks. But yes! I am still ingesting only beef, salt, water and black coffee. I decided to move my updates from Facebook to a blog because I’d like to talk about my health journey in more detail as I have found other’s blogs to be tremendously helpful.
The past two weeks have been a little rough due to abstaining from participating in lots of celebratory food! A couple days ago it was my birthday. I had the most delicious prime rib; it was enormous, fatty and satisfying, however, I did not have chocolate cake or any other treats, nor did anyone else and that changed the spirit as well. It’s not just you that only has the fun, but everyone enjoys the mood of slicing a happy iced birthday cake! It’s just special and makes you feel warm.
Last week it was my mom’s birthday and I made what she said was a really yummy lemon blueberry cheesecake. Truthfully it looked amazing. I did not have a slice. And finally there was the 4th of July incredible spread of hamburger fixin’s, fresh fruit, homemade potato salad, casseroles and typical 4th fare at Critzer Family Farm. I selected the beef patties from the tin tray. Wah, wah.
But I’m proud of myself for sticking with it. It’s definitely not fun at times, because celebrations are special in part because of the foods associated with them, the birthday cake, the glass of wine, the slice of pizza. But I want to get well and every mouthful of beef is worth it to the exclusion of everything else. It’s also teaching me how to create or participate in a festive mood without relying on food.
These past two weeks I haven’t noticed any changes to be encouraged or discouraged. It’s hard to have an accurate gauge of progress when all I did was move from the bed to the beach chair, to the waves, to the beach chair to the porch chair. I have increased my electrolytes and find that I really need to stay on top of that. I relied heavily on these prior all beef and it seems I am needing an extra dose a day. I did have one crash at the beach, and that’s no fun, but after taking a dose I revived. My stomach bloat came back a bit and my weight shifted up a couple pounds but all that’s normal with a smack from the monthly cycle.
I tried several new cuts of beef this week from the local farmers and most were unsuccessful, due I’m sure to the way I prepared them. Stew meat and short ribs were so tough and chewy that eating was a chore. I was happy when the meal was accomplished. I think the slow cooker is going to become my new best friend. However, my ribeyes were freaking delicious and I’m getting better at those.
I do love though the small amount of cooking and cleaning time involved in this way of eating. That is something I can celebrate. And I never feel bad after eating. Today I’m going into week 6, the amount of time I originally said that I would do this experiment before reintroducing foods. This week I’m going to be resuming daily activities so hopefully I will see some clues as to what healing is taking place and have something interesting to report next week!

Hi everyone, I’m Christi and I’ve struggled with some aspect of health for most of my life. It’s not the most interesting thing about me for sure, but it has shaped the path of my life and allowed me to become really tough. I continue to pursue that which I love and have some pretty great adventures. As grateful as I am for the character development and all, I’d really like to be a vibrantly healthy human. Here is my blog on what’s been wrong and how by God’s grace and healing I am going to set it right.
I can’t believe I’ve made it 3 weeks
already on my beef, salt, black coffee and water diet. This week I did
find it more difficult than usual to look at fruit especially, like
golden slices of kiwi and fresh blueberries picked off the bush in the
back yard. Mom’s homemade yogurt looked creamily sublime. Oddly, after
all my googling I couldn’t find anything about Carnivore dieters and
whether or not they miss eating anything else. It seems most people
treat this diet pretty straight forward with a steel resolve and that’s
that.
I’m averaging still 2 lbs meat per day and who knew that plain seltzer water was THAT exciting.
Interesting thing #1: So my body went through another one of those
curious healing phases where I got so, so sleepy and just had to stay in
bed for 1.5 days and sleep and relax. I felt like I weighed 500 lbs,
just so heavy and I simply could not do anything, moving, walking, any
kind of work. Again, totally different sensation than a lyme/ mold
flare or exhaustion due to lack of food, overdoing it etc.. It’s hard
to explain, a very sweet, pure tiredness accompanied by no other
negative symptoms where my only desire was to sleep. Since this was the
second time I looked all over the web for what this could be. I found
in a comment section of a post by Charlene Anderson, a carnivore for 20
years who healed completely from Lyme disease, spoke of the exact same
pattern after beginning to eat meat, these periods of total
exhaustion/sleepiness/heaviness followed by gaining strength and
healing. After this two day bout of extreme tiredness I got up with
renewed strength and went for a substantial hike and felt amazing. I’m
interested to see if this pattern continues.

Interesting thing
#2: I had a church job in Cville, start time 7:30 am which means waking
at 5am. I’ve done this gig many times and usually I hate my life from
beginning to end until I’m able to be back in bed for a nap. Formerly
my entire upper body would burn, aching in shoulders, arms etc..
circulation may or may not be good. I just felt so acidic and hardly
awake, with constant yawning and a struggle for the brain to function.
This morning, yesterday, I was incredibly more alert, not exhausted. I
had NO pain or burning in my body, none of that miserable acidic
feeling. I don’t think I ever yawned and had brain clarity. Circulation
wasn’t great, but not terrible. I felt at least twice as good as I
normally do doing that gig and I only had around 5 hours sleep. Whaaat??
Huh, that’s cool.
Interesting thing #3: As soon as I took communion and ingested a thimble full of actual wine I began to have brain fog. The pain came back to my right shoulder and arm and I immediately lost circulation in my hands. I get this weird sticky feeling that sometimes precedes blue fingertips. I could feel my nervous system firing on the inside as if the inside of my brain is twitching (so pleasant right?) (My church I dip a wafer in a cup of wine and barely ingest any wine.)
Now was this psychological? An over
reactive nervous system? A gut sensitivity? I have no idea, but it did
happen. It tells me that I’m on the right track by eliminating
anything but beef and salt. This also jives with everything I’ve read,
that when people who are super sensitive go down to beef and salt they
can have extreme reactions when re-introducing food/drink before the
body has healed.
Weight: minus 1 more lb, minus 4 total.
(Seriously a great diet for weight loss if anyone’s interested. Even on
keto I was hungry ALL the time and now I’m just hungry only at
mealtimes and totally satiated the rest of the day.)
So I think week 3 is progress! I am very hopeful about these signs of healing!

Everything’s going good on the
diet. They say that the adaption period is 1-2 weeks, in other words
the amount of time you’ll potentially be miserable, but I really haven’t
experienced anything other than normal.
I’ve got some major
symptoms with Mold Illness/Lyme, including this week a couple days I had
to go to bed to wait out a reaction possibly to mold, so I haven’t seen
any mind blowing miracles yet, but I would expect that little things
would clear up before any significant symptoms. Here is what I have noticed:
Before Carnivore I had to eat regular meals on the dot to avoid blood
sugar drops. It’s like either eat NOW or ruin your entire day. Now I
get hungry and then I know I’m ready to eat, but if a prolong meal time
or even if I skip breakfast nothing bad happens.
Before
Carnivore randomly I would get incredibly bloated, like 6 months
pregnant bloated, no matter what I ate, often depending on the humidity.
My body was swollen and it was incredibly uncomfortable, pressure on
my back, like my body would pop. Now most days my stomach is entirely
flat and only on some extremely humid days did I bloat a bit, but not as
much. So that’s cool.
Weight: I lost 2 more lbs, totaling 3 lbs.
Week 1 I was eating a ton, 2-2.5 lbs, and that seems to align with what
a lot of people on Carnivore were saying; this week 1.5-2 lbs. I’m not
really bummed about not eating anything else except when I see mom peel
and slice up a juicy gold kiwi and dad pick fresh blueberries.
I
did come to LOATHE the fattier version of the ground beef I was eating
even though previously it was satiating, so I went back to some steaks
and alternated with lesser lean ground. I’ve missed the local market
for two weeks so I’ve been missing variety in the cuts of beef. I’m
going to make it a priority to get there next Saturday because the
Kroger grass fed steaks are hit or miss in terms of taste and I’m bored
with the ground beef.

Carnivore week 1 update! I thought I would post an update on my progress after I complete each week of my beef, salt and (um) black coffee diet for anyone who’s curious.
It’s been a really interesting week. So first I had to get the amount of fat right. Grass fed ribeyes from Kroger didn’t have enough fat. The 85% lean was much better but still didn’t have enough fat to satiate. I ordered some tallow online and was ecstatic when it arrived; however, by that time I had switched to some local beef which was a lot fattier, probably 75-80% and I didn’t need the tallow. I’ve stuck with the ground beef since then with the exception of one luscious steak grilled at a friend’s house. I’ll probably switch up the cuts to have some variety, but really the ground beef has been fine. I’m just happy to have enough fat. I hate cooking and embrace the simplicity of this situation.

My brain
clarity is excellent. I was expecting major depletion in electrolytes
because when I did Keto for 6 weeks I had real problems with that and it
severely affected at least 2 concerts. I felt like my brain was
hijacked. After researching I see that it had to do with electrolytes
and that that’s a thing with Keto. I’ve had no major issues however
with only eating meat, which was really surprising. I did purchase some
electrolytes several days in and have started taking them anyway as a
precaution.
The really cool, cool part is that I already
experienced days of “die off” and healing. “Die off” is known to Lyme
patients as when the bacteria begin to die and as a result you feel
either exhausted, sick or both. It’s a very unique feeling and it’s
different than feeling weak from not getting enough nutrients say. For
me this time after eating meat for 3 days I became sweetly exhausted,
again not a sick, frail, thin, drugged exhausted that goes with Lyme
symptoms or lack of nutrition or low blood sugar, I know all those
feelings, but a my body is healing I need to rest exhaustion still with
clear brain function. It was wild and very exciting. I’m gaining energy
again and feeling very hopeful.
Digestion is fine; mild runs only one day. I thought it would be way worse. Lost one pound.
The diet is very satiating and I don’t have drops in blood sugar or intense craving for food. I have been able to sit and watch other people eat in front of me without feeling deprived.
I would say week one is a success. I’m excited about week 2!
